Chocolate SunButter No Bake Cookies...

This is the easiest and tastiest no bake cookie recipe in the world.  If you haven't figured it out yet, you will - I have a huge sweet tooth.  Everyone knows it.  When in doubt, give me chocolate.  The following recipe was passed down to me from a friend of a friend of a friend (as the best recipes usually are).  It originally called for peanut butter, which I used to make all the time in my pre-nut free momma days.  I have since replaced the peanut butter with SunButter and they taste just as good, if not better (honest)!  I don't want to keep you waiting, so without further ado, here is the recipe!  I will be making another batch right now...  :-)

2 Cups Sugar

½ Cup Cocoa (You can get nut free cocoa from Vermont Nut Free Chocolates)

1 Stick Butter

½ Cup Milk

½ Teaspoon Vanilla

½ Cup SunButter

3 Cups Quick Oats (I use Quaker)

Mix the sugar, cocoa, butter and milk into a large saucepan.  Bring the mixture to a boil over medium heat and cook for 1 ½ minutes.  Remove from heat and add vanilla, SunButter and oats.  Drop onto wax paper by the large tablespoons to cool.  You of course can make them as big or as little as you want.  They are pretty rich in taste, so I don't super size them  Also - just a note - these cookies are honestly better the day after you make them.  They take some time to solidify so don't worry if after an hour of sitting on the counter they are still a bit soft.  Given them some time to come together.  Enjoy!!!
